seashore potatoes

We all fondly remember our jaunts to the Upanga seashore adjacent to Agakhan Hospital in DAR......one of the staples available by vendors there was the mashed potatoes in a huge aluminum mixing bowl that "hondo" skimmed with a very small version of the mixing bowl............here below is a recipe that has been tried and tested.....hope you like it.

8 medium potates not peeled
boil until soft, peel.....mash unevenly and collect in a mixing bowl
add 5 tbsp of lime juice, 2 tsp of rock sea salt. and mix thoroughly. if you feel adventurous, make coconut chutney......1/2 cup of unsweetened dessicated coconut, 2 tbsp lime juice, add rock salt to taste...ENJOY!

Zanzibari Mix

EASY ZANZIBAR MIX RECIPE
INGREDIENTS:
2 CUPS OF BLACK GRAMS (CHANNA) SOAKED OVERNIGHT
2 SCOTCH BONNET PEPPERS CRUSHED
1 SMALL CAN OF CAMPBELL’S TOMATO SOUP
4 POTATOES DICED INTO SMALL PIECES
4 TSP LEMON JUICE
CHEVDO
COCONUT/ GREEN CHILLI CHUTNEY
CHAAT PAPDI (AVAILABLE IN STORES)
1 TSP SALT
4 TSP GRAM FLOUR DISSOLVED IN ½ CUP OF WATER
6- 7 CUPS OF WATER
METHOD:
EMPTY TOMATO SOUP IN A LARGE POT
ADD SOAKED CHANNA (2 CUPS)
ADD WATER, LEMON JUICE, SALT, GRAM FLOUR, CRUSHED SCOTCH BONNET PEPPERS AND COOK FOR APPROX. 30 MINUTES AT MEDIUM HEAT
ADD DICED POTATOES TO POT AND COOK FOR FURTHER 15 MINUTES OR UNTIL SOFT.
Serves 12

Samli ya kupikia (au mafuta) kiasi


Namna Ya Kutayarisha Na Kupika


1.Osha na roweka mchele kiasi masaa kuanzia mawili au zaidi. 2.Saga mchele na tui kwenye mashine ya kusagia (blender) mpaka uwe laini usiwe na chenga. 3.Tia hiliki, hamira na unga wa ngano saga tena mpaka uchanganyike. 4.Mimina kwenye bakuli na uache uumuke kiasi. 5.Ukisha kuumuka changanya sukari na yai 6.Tumia kama kijiko 1-2 cha chai cha samli kwa kukaangia kila kitumbua. 7.Mimina mchanganyiko kiasi kwenye kikarai maalumu cha kuchomea vitumbua. 8.Kitumbua kikiiva upande mmoja, geuza upande wa pili mpaka kiwe tayari. 9.Panga kwenye sahani. unaweza kula vitumbua vikiwa moto au vikishapoa

1-   Rice       2 mugs
2-   Coconut milk    2 mugs
3-   1 large egg
4-   Sugar       ½ mug
5-   Cardamom (elaichi) ½ tsp
6-   Yeast ½ tsp
7-   All purpose flour 2 tbsp
8-   Ghee or oil as desired
Method
1-   Soak rice for at least 2 hrs
2-   Blend rice and coconut milk until fine texture
3-   Add yeast and cardamom and blend further until mixed
4-   Pour into a mixing bowl and let sit until increase in volume
5-   After attaining volume, add sugar and egg
6-   Use about 2 tsp for every vitumbua to cook
7-   Pour mixture in vitumbua cooking pan about ¾ full
8-   Cook one side and flip it with a metal skewer
9-   Set on plate after cooking and serve while warm...
